Salt and pepper tofu (ζ€ηθ±θ , jiΔo yΓ‘n dΓ²u fu) is one of the most addictive ways to eat tofu β crispy golden cubes tossed with fragrant garlic, fresh chili, and an aromatic salt-pepper seasoning mix. The key is getting the tofu shatteringly crispy through a cornstarch coating and hot oil, then tossing it quickly with the aromatics so they perfume the tofu without making it soggy.
Salt and pepper seasoning (ζ€η) is a Cantonese technique applied to many ingredients β squid, shrimp, chicken, and tofu. The seasoning mix of Sichuan peppercorn, white pepper, and salt is toasted for maximum flavour.
Ingredients
- β’ 400g firm tofu, pressed and cut into 2cm cubes
- β’ 4 tbsp cornstarch
- β’ Oil for deep frying
- β’ 3 cloves garlic, minced
- β’ 2 red chilies, sliced
- β’ 2 spring onions, sliced
- β’ Salt and pepper mix: 1 tsp Sichuan peppercorns (toasted and ground), 1 tsp white pepper, 1 tsp salt, Β½ tsp five spice
Instructions

Press tofu for 20 minutes. Cut into cubes and pat very dry.

Toss tofu cubes in cornstarch until evenly coated. Shake off excess.

Heat oil to 180Β°C (360Β°F). Fry tofu in batches for 4-5 minutes until golden and crispy. Drain on paper towels.

Pour out most of the oil, leaving 1 tbsp in the wok. Add garlic and chilies, stir-fry for 30 seconds.

Return tofu to the wok. Add salt-pepper seasoning mix. Toss vigorously for 30 seconds.
