Make the pork topping: heat oil in a wok over high heat. Add ground pork and stir-fry, pressing to break up, until fully cooked and beginning to crisp — about 5 minutes. Add ya cai, soy sauce, dark soy, and Shaoxing wine. Stir-fry for 2 more minutes until intensely flavoured. Set aside.

Mix sauce: combine sesame paste, chili oil, soy sauce, vinegar, sugar, Sichuan peppercorn, and garlic in a bowl. Add hot water gradually, stirring until smooth and pourable.

Cook noodles according to package directions. Drain well — excess water dilutes the sauce.
